- 1 bell pepper (seeds removed and cut into medium-thick slices)
- 1 yellow summer squash (cut into 1 inch cubes)
- 1/2 cup orange juice
- 4 Tbsp. red wine vinegar
- 4 garlic cloves (chopped)
- 1 Tbsp. fresh oregano (chopped)
- 1/2 tsp. paprika
- 1/4 tsp. allspice
- 1 tsp. red pepper flakes (less or omit to control heat)
