- 1.5 liters vegetable stock (6 + ¼ cups)
- 2 sprigs fresh thyme
- 400 mL full fat coconut milk (1 can)
- 1 red chilli (deseeded and finely chopped, use scotch bonnet if you're feeling brave)
- 2 fresh corn (cobs, each cut into 4 slices)
- 400 grams sweet potato (weight after peeling, peeled and diced)
- 1 red peppers (large or two medium, seeded and diced)
- 1/4 tsp. pimento (ground, /allspice)
- 250 grams sweetcorn (frozen)
