- 1 large free range egg
- 2 Tbsp. chives (finely chopped)
- 1 clove garlic (finely chopped)
- 1 tsp. ground coriander
- 1 tsp. ground turmeric
- 1/2 tsp. ground cumin
- 1/2 tsp. fine sea salt
- 1 pinch chilli flakes (optional)
- 1 handful coriander (cilantro leaves + tender stems, roughly chopped)
- ghee (or extra virgin olive oil, to shallow-fry)
- 4 large free range eggs (one or two eggs per person)
- 1 handful rocket (arugula or spinach leaves, to serve)
- chutney (to serve, if desired)
