- 3 large shallots (or 1 red onion, chopped or thinly sliced)
- 1 bay leaf (large)
- 1/4 tsp. freshly grated nutmeg

- 2 apples (peeled and chopped or thinly sliced, then tossed with juice of ½ lemon)
- 2 Tbsp. light brown sugar

- 3/4 cup walnuts (toasted and chopped)
- 1/2 cup leaf parsley (lat-, chopped)

- 2 cloves garlic (chopped)
- 1 Tbsp. thyme (finely chopped )
