- 1 large onion (thinly sliced into half moons)
- 3 garlic cloves (peeled and thinly sliced)
- butternut squash (A couple of good handfuls of peeled and diced, roughly 1 inch cubes)
- 1 tsp. turmeric
- 1 tsp. ground coriander
- 1 tsp. ground cumin
- 1 tsp. chilli flakes
- 1/2 tsp. cinnamon
- 400 grams cannellini beans (tin of, drained and rinsed)
- 400 grams chopped tomatoes (tin of)
- 1 handful chopped parsley (or coriander to garnish, optional)
- vegetable (A little, /olive oil for frying)
- crusty bread (to serve **optional**)
