I liked this a lot! It's an easy weeknight meal. I like the contrast between the lemony couscous and the spiced meatballs. I didn't have any hummus but I'm sure it would be a good addition. Some taziki sauce would be good too. I made a few adjustments like using ground turkey, and mixing the spice into the meat before cooking. In an attempt to sneak the veggies into the meal, I cut them into a small dice. One other quick tip: Don't bother shaping the meatballs, just get a small cookie scoop and use it to scoop the meatballs directly into the pan.

Easy and delicious! Will make again. I used tri-color couscous, yellow cherry tomatoes instead of the plum tomatoes, dried onion flakes (because the store didn't have green onions when I went) and added some snap peas I had in my crisper, sliced lengthwise. For hummus I used my favorite, roasted red pepper. Was a light and refreshing. dish for a hot late-summer day.
