Description
Literally translated as “stuffing”, hashweh is Middle Eastern comfort food at its finest. Top it with fried nuts and raisins for a crunchy, sweet, and savory hint to every bite. Hashweh makes a great side or stand-alone main dish when served with cold plain yogurt and crunchy veggies. The recipe, which makes 8 cups, is a Yummly original created by Rania Renno.
Ingredients

4 SERVINGS
- 3 Tbsp. extra-virgin olive oil (divided)
- 3 Tbsp. vegetable oil (divided)
- 1 medium onion (diced)
- 1 lb. ground lamb
- 2 1/4 cups chicken broth (plus an extra 1/4 cup if needed)
- 1 1/2 cups jasmine rice
- 2 tsp. salt
- 1 1/2 tsp. allspice
- 1 tsp. ground cinnamon
- 1/2 tsp. ground cumin
- 1/4 cup slivered almonds
- 1/4 cup raw cashews
- 3 Tbsp. golden raisins (or dried cranberries)
- sliced green onions (or chopped parsley)
- plain yogurt
- sliced radishes (or other favorite raw vegetables, pickled peppers, and/or pomegranate seeds)

Directions
- Pour 1 Tbsp. each olive oil and vegetable oil into a large frying pan over medium heat and let heat through. Then add diced onion and cook, stirring often, until translucent, 5-7 minutes.
- Add ground lamb to pan and cook, stirring occasionally and breaking meat into small crumbles, until lamb meat is cooked through, about 5 minutes. Transfer meat mixture to a bowl and set aside.
- In a medium saucepan, bring 2 1/4 cups chicken broth to a boil. Remove from heat and cover to keep hot.

Great flavor and quick to prepare... served it with fresh cucumber, radishes, and green onion.

Excellent base dish! Ended up doubling it and adding more spices. (Garlic, onion powder, cardamom, cayenne, some red pepper.)

We enjoyed this aromatic dish. Something different. I cut the oil down to 4Tbl by only using 1 Tbl to cook the onions and then 1 Tbl to cook the nuts. Next time I may double the nut and raisin mixture though.
