- 4 egg whites (free-range, at room temperature)
- 4 pears (peeled, cored and sliced)
- 2 apples (peeled, cored and sliced)

- 1 cinnamon stick (snapped in half)
- black pepper (couple of twists)

- 1 orange (finely grated zest and juice)

- 1 vanilla pod (seeds removed, save a third of the seeds for the cream filling, or 4 drops of vanilla extract)
- 2 handfuls blackberries (large)
- 300 mL double cream (or whipping, /11fl oz)
- 20 grams icing sugar (/¾oz)
- 1 drop vanilla extract (or reserved vanilla seeds)
