- 2/3 cup water
- 1 Tbsp. lemon juice
- 1/3 cup cane sugar (or coconut sugar)
- 1 tsp. ground cinnamon
- 1 1/2 tsp. vanilla paste (Nielsen-Massey is gluten free)
- 150 grams chestnut flour (sifted, from nuts.com)
- 62 grams tapioca starch
- 94 grams arrowroot starch
- 7 grams psyllium husk (I use India Tree Organic)
- 1 1/2 tsp. baking soda (aluminum free)
- 1 tsp. kosher salt
- 2 tsp. ground cinnamon
- 1 tsp. ground ginger
- 1/4 tsp. ground allspice
- 1 cup cane sugar (unbleached, I use Wholesome Organic)
- 1/2 cup light brown sugar (lightly packed, Wholesome Organic brand)
- 3 Tbsp. liquid (canned chickpea, garbanzo bean, also known as aquafaba)
- 1/4 tsp. cream of tartar
- 1 1/2 cups applesauce (chunky, preferably homemade)
- 2/3 cup avocado oil
- 1 tsp. gluten-free vanilla extract (pure, I use Frontier Organic)

- 3 Tbsp. soy (non-dairy, free butter)
- 6 Tbsp. light brown sugar (lightly packed)
- 3 Tbsp. coconut (or other milk)
- 1/2 tsp. kosher salt
- 2 cups powdered sugar (sifted)
