  • 1 tablespoon lemon juice
  • 1/3 cup cane sugar (or coconut sugar)
  • 1 teaspoon ground cinnamon
  • 1 1/2 teaspoons vanilla paste (Nielsen-Massey is gluten free)

  • 94 grams arrowroot starch
  • 7 grams psyllium husk (I use India Tree Organic)
  • 1 1/2 teaspoons baking soda (aluminum free)

  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1 cup cane sugar (unbleached, I use Wholesome Organic)
  • 1/2 cup light brown sugar (lightly packed, Wholesome Organic brand)
  • 3 tablespoons liquid (canned chickpea, garbanzo bean, also known as aquafaba)
  • 1/4 teaspoon cream of tartar
  • 1 1/2 cups applesauce (chunky, preferably homemade)
  • 2/3 cup avocado oil
  • 1 teaspoon gluten-free vanilla extract (pure, I use Frontier Organic)
