- 1 red pepper
- 2 acorn squash
- 1 Tbsp. jam (red pepper, or other pepper jam)
- 2 Tbsp. extra virgin olive oil (divided)
- 1/2 yellow onion (diced, about 1/2 cup)
- 1 apple (cored and diced, I used Braeburn)
- 1 tsp. dried sage (crumbled)
- 1/2 tsp. sea salt (or 1 tsp kosher salt)
- 1/4 cup pinot grigio (white wine, works well)
- 6 cups crumbled corn bread (lightly, use sage instead of the thyme in this recipe)
- butter (Spiced, ingredients below)
- 1/3 cup chopped parsley (coarsely)
- 3 Tbsp. pepitas
- 4 Tbsp. unsalted butter
- 1/8 tsp. smoked paprika
- 1/8 tsp. cayenne
- 1/8 tsp. kosher salt
- 1 pinch sea salt
