- 3/4 inch fresh ginger (chunk, unpeeled and roughly chopped)
- 1 Tbsp. rice vinegar
- 1 Tbsp. soy sauce
- sea salt (Maldon or other)
- 1 bunch cilantro leaves (fresh, chopped)
