- 2 tsp. cumin
- 1 cup salsa
- 2 cups chicken broth (you can also substitute 2 cups of water with 2 chicken bouillon cubes – I heat it in the microwave for 3 minutes)

This was a solid spanish rice recipe. I used a roasted tomato salsa and veggie broth. The appearance was just as good as the taste.

Really tasty! Added a bit more chicken broth to mine but the overall flavors were great!

I added some frozen peas and a bit more salsa and water in order to make it work. I also had some leftover chicken breast that I cut up into it so it needed the extra liquid. Hubby enjoyed it as did I so it is on the make it again list.

Family loves this, very simple recipe, but tasty like crazy.... occasionally I add jalapeños to give it a good kick.....
