- 1 yellow onion (large, peeled and diced)
- 1 red pepper (seeds removed, and diced)
- 1 Tbsp. garlic (diced)
- 2 tsp. ground cumin
- 2 tsp. dried oregano
- 1 tsp. paprika
- 1 dash cayenne (optional)
- 2 tsp. salt
- 1 tsp. ground black pepper
- 2 Tbsp. all purpose flour (unbleached)
- 6 cups chicken broth
- 3 lb. Yukon Gold potatoes (peeled and cut into 1 to 1 & 1/2 inch chunks)
- 1 cup sour cream
- 1 1/2 cups grated sharp cheddar cheese
- 3 cups pork carnitas (Substitute pre-cooked pork roast from your local market, or fry up some bacon or sausage to use in place of the Carnitas if you like.)
- 1 cup chopped fresh cilantro

Very good. I used a smoked paprika, would try a sweet next time but it turned out well and very hearty. Will try with black beans next time.
