  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 6 ounces dried chorizo (casings removed)
  • 3 cloves garlic (pressed)
  • 2 cups dry white wine
  • 4 pounds mussels
  • parsley (for garnish, optional)
  • 26 ounces frozen french fries
  • 1/2 teaspoon smoked paprika

    Directions

    1. In large Dutch oven, heat olive oil on med-high heat. Add onion, cook 6 minutes. Meanwhile, roughly chop chorizo. Add chorizo and garlic to Dutch oven and cook, stirring, 3 min, or until reduced slightly. Add 4 lb mussels. Cover and cook 5-7 minutes or until most shells open, stirring twice. Discard any unopened mussels. Garnish with parsley. Serve with french fries (cooked to package directions) sprinkled with paprika.
