- 1/2 lb. chorizo sausage (mild, Spanish chorizo if possible, Mexican if not)
- 14.5 oz. fire roasted tomatoes (diced and drained)
- 1 carrot (large, diced)
- 2 yellow potatoes (medium, diced)
- 1 onion (large, diced)
- 3 cloves garlic (sliced)
- 3 bay leaves
- 1 1/2 tsp. salt
- 2 tsp. smoked paprika (not your regular paprika)
