- 4 garlic cloves (– skinned and finely chopped)
- 1 1/2 Tbsp. pimentón dulce (smoked Spanish sweet paprika)
- 1/8 tsp. ground cayenne
- 3 lb. tomatoes
- 1/4 cup spring water
- 1/2 cup cooking liquid (reserved chickpea, or spring water)
- 3 cups chickpeas (cooked)
- 1 1/2 tsp. sea salt
- 2 Tbsp. amontillado sherry (or Marsala)
- 2 Tbsp. Italian parsley (finely chopped, as garnish, optional)
