- 1 Tbsp. olive oil
- 1 lb. boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 cup chopped onion
- 3 garlic cloves (minced)
- 1 cup long-grain white rice (uncooked)
- 1 1/2 tsp. paprika
- 1 1/2 cups low sodium fat free chicken broth
- 1 cup tomato sauce (canned)
- 1 Tbsp. lemon zest
- 12 Manzanilla olives (cut in half, the green ones stuffed with pimentos)
- 1 Tbsp. chopped cilantro
- 1 Tbsp. capers (I like these and had them on hand so I tossed them in at the end, but they’re not necessary, optional)
