Cooked with eggs, aromatics, and golden, crispy potatoes, this is a no-nonsense comforting dish that stands the test of time, across many cultures.
Ingredients

2 SERVINGS
- 1 can spam (cubed, 1cm)
- 1 zucchini (cubed, 1cm)
- 1 cup potatoes (cubed and peeled, 1cm)
- 1 Tbsp. flat leaf parsley (chopped for garnish, optional)
- 1 white onion (small, sliced thinly)
- 1 egg
- 1 Tbsp. vegetable oil
- salt

Directions
- Boil the potatoes in salted water for 6–8 minutes, or until they are almost cooked. Strain and set aside.
- In a skillet over medium heat, add the oil and potatoes. When they just begin to caramelize, add the Spam.
- When the Spam and potatoes are almost completely browned, add the onions and zucchini. Continue to cook until the vegetables are completely cooked through, about 5 minutes.
- Create a well in the center of the pan and crack in the egg. Season with salt and pepper. Cover with a lid for 4 minutes. Sprinkle over the parsley and serve hot.

I made this hash with butternut squash because I didn't have zucchini on hand. I also omitted the potatoes to cut back on the carbs. Surprisingly, it was delicious with the spicy Spam. My husband loved it so I will definitely make it again. A great way to add vegetables to a breakfast!
