Directions
- For tomato sauce, heat 3 tbsp olive oil in a saucepan and sweat onion until soft. Add bay leaves and oregano and cook briefly. Add tomato paste, tomatoes and stock. Crush tomatoes, bring to a boil and simmer for 15 mins. Season and add sugar.
- Meanwhile, cook spaghetti in boiling salted water according to package directions. Drain.
- Heat 2 tbsp olive oil in a pan, sauté peppers and set aside. Add prawns and sauté for 3 mins. Add garlic and cook for 1 min. Season, remove from heat and set aside.
- To finish, add pepper to tomato sauce along with orange juice and zest and cook until peppers are heated through. Toss with spaghetti and arugula and top with prawns.
