- 1/4 cup olive oil
- 1 onion (diced)
- 4 garlic cloves (peeled and thinly sliced)
- 3 Tbsp. chopped fresh thyme (or 1 T. dried thyme)
- 1/2 medium carrot (finely shredded)
- 56 oz. tomatoes (peeled whole, crushed by hand, and juices)
- 1 Tbsp. sugar
- 1 tsp. salt
- 1/4 tsp. red chili pepper flakes
- 3 cups day old bread (cut into 1″ cubes)
- 2 lb. venison
- 3 eggs (beaten)
- 3 garlic cloves (minced)
- 3/4 cup Pecorino Romano cheese
- 1/4 cup Italian parsley (chopped)
- 1/4 cup pine nuts (toasted)
- 1 tsp. sea salt (or kosher salt)
- 1/2 tsp. freshly ground black pepper
- 1 cup canola oil (for frying, 2 c. if you use 2 pans, like I did)
- 1 lb. spaghetti
- 2 Tbsp. salt
- Parmigiano Reggiano (for garnish, optional)
