  • 1 tablespoon olive oil
  • 1 ounce butter
  • 7 ounces bacon
  • 4 ounces parmigiano (grated, or Pecorino Romano cheese)
  • salt

  • 7 rashers (lean bacon, chopped into pieces, I use kitchen scissors or pancetta)
  • 3 eggs
  • 2 ounces heavy whipping cream
  • milk (whole will taste best, but 2 % is still good)
  • 1 ounce pecorino romano cheese (please do not use Kraft)
  • salt
  • black pepper
  • 1 pound spaghetti (high quality)
  • 6 ounces guanciale (pancetta if you can’t find it, or even 6 or 7 rashers of lean bacon chopped into pieces)
  • 4 eggs
  • 1 ounce pecorino romano (grated real, remember, it’s a Roman dish)
