- 2 tsp. red pepper flakes (dried, to your taste)
- 6 Tbsp. extra virgin olive oil (…divided in half)
- 1 onion (medium, diced)
- 3/4 tsp. sea salt (…plus extra for the boiling pasta water)
- 1/4 cup pasta water (...divided in half)
- 1 cup grated pecorino (micro-plane, /Parmesan mix - divided in half.)
- cheese (Extra, for individual plates after serving.)
