This was delicious! I doubled the recipe and made a full sized lasagna in a 9x13 pan. 8 servings. Used 1 1/2 roasted squash, then used the other 1/2 to make a smaller serving which I froze for later. I think the key is to roast the squash to boost flavour and also to use a really tasty/good quality marinara sauce. I used a homemade marinara and find San Marzano- type canned tomatoes (puréed) make the best sauce. I also used freshly grated Parmesan cheese and light ricotta. Took 45 min to bake at 350F covered, then removed foil and put under broiler for 3-5 min.

This is delicious!! Easy quick and gives the same satisfaction as lasagna with real noodles. Great for digesting. I am currently doing the 21 day fix and am a carb lover but I'm only allowed 2. So this meal made primarily out of veggies is delicious. If you are doing the 21 day fix I filled up the veggie container so 1 cup and counted it as,
1 veggie
.5 fruit
1 protein
1 healthy far

I made this for friends and they raved about it. I did add Italian seasoning to the top and subbed blended cottage cheese for ricotta, but didn't change anything else. I baked it all in a 9x9 dish.

It was great, a little runny but no big deal. If you heat it more I found the more runny it became!!
