Whoever said this didn’t taste good is insane! It’s eggs... and fresh vegetables ... simple and full of natural flavors. The only thing I did differently to ingredients was add garlic. Instead of using a killer I put the “batter” into a muffin pan and baked them at 350 for 30-35 min. Half way through baking, I sprinkledcheese on a few of them just to shake it up a bit. They came out moist, flavorful and easy to store for later!

It stuck to my pan and ended up a little dry, so I put salsa on top. Great idea in concept, but I wouldn't make it again.

Being a T2 diabetic, I'm always looking for new recipes with low carbs. I don't understand this one, however. The "main" difference between this recipe and others with spaghetti squash is that this one contains kale; yet this recipe has almost 3x the carbs of your other recipes. Is this correct?

This is delicious. Of course you can add any precooked, dried veggie combination you like. Also, you can double the recipe, put it in an oil sprayed pie pan and bake it at 350° for about 30 minutes for a crustless quiche. Have fun with it!
