- 1/2 seeds
- 8 sausage casing (ouncesfresh Mexican chorizo, removed, about 1 cup)
- 15 oz. diced fire-roasted tomatoes (drained)
- 1 chipotle chile (canned, en adobo seeded, stemmed and roughly chopped)
- 1 Tbsp. chipotle (canning sauce, adobo)
- 2 garlic cloves (peeled and finely chopped)
- 1 cup chicken broth (vegetable broth or water)
- salt
- 1/4 cup Mexican crema (sour cream, crème fraiche or Greek-style yogurt)
- 1/3 queso anejo (cupgrated Mexican, or other garnishing cheese like Romano or Parmesan, optional)
- 1 avocado (smallripe, pitted, flesh scooped from the skin and cut into ½-inch cubes)
- 1 handful cilantro leaves (for garnish, if you have them, optional)
