It might have been better if I also fried the squash, I find it too moist and probably needed more seasoning, I added Kimchi to add to flavors

We loved this. The seasoning was right. The garlic and ginger were cooked lightly enough to be cooked and for maximum flavor.

The recipe itself is a little bland, ginger heavy and with a tendency to be soupy. Following the comments, I increased celery and cabbage, added bell pepper and seasoned to taste (rice wine vinegar, sriracha seasoning, fish sauce, 1/2 ginger and 2x white pepper). After roasting the squash, I let it sit in a bowl in the refrigerator, and prior to adding to the veggies, soaked up excess liquid with a paper towel. Overall it was yummy, but I feel the adjustments were needed

DELICIOUS! Didn’t have the Coleslaw, but it was still great without. Loved the sweetness of the squash and the salty of the meal. The sweetness didn’t stand out with the help of the veggies and soy sauce. Everything went together perfectly. Plan to make this all the time.

O.M.G. My family LOVED it! Didn't have the exotic ingredients, but soy sauce worked well. I added other shredded veggies, too.

New to the vegan life so this was different for me, suprisingly easy and delicious!!

So easy to make. Could be made without sauce, condiments only. We added Gardein Chicken.

Not a huge fan. The ginger is overpowering and I needed to add salt to add to the flavor. Maybe the aminos and Tamari combo didn’t work, but either way not making it again. Worth the try to do something different with spaghetti squash.

Delicious and so easy! I used more of the cabbage than it called for and added mushrooms and shishito peppers. Also, marinated tempeh and added it for protein. Yummy!

I really didn’t know what to expect I’ve never had spaghetti squash. This dish was AMAZING!!! Kids didn’t even know it wasn’t pasta.

I give this a 3 because, but part of the problem was me. Normally I improvise as I cook, but did not this time & it turned out mushy, but tasted good. I think I had too much squash, should have increased the Cole slaw to offset that

Bake squash for full 40 min softer is better. Added diced pan fried chicken seasoned with salt and white pepper. Will add more cabbage next time

it turns out to be something better suited as a spring roll innard than a chow mein, but still tasty. definitely won't be using this recipe again though, unfortunately.

Loved this! My squash was huge so I didn't use the whole thing. Added another stalk or two of celery for crunch, but followed the rest to a tee. Will make again!

This was amazing!! I like the suggestion to add mushrooms... definitely will make again with them added. Also, if you can cook the spaghetti squash in advance, this would be a super quick week night dinner!

Delightful and super tasty. Doubled slaw with a super food slaw mix, used braggs and 2 T dark agave. Also added sautéed mushrooms. Boyfriend LOVED it.

Turned out great! The addition of the celery and cabbage lends a little crunch to the dish... Which is awesome since I tend to think that a lot of spaghetti squash dishes are too "mushy".
