- 14.5 oz. diced tomatoes (with Italian spices, drained)
- 3 cloves garlic (minced)
- 1 tsp. italian seasonings (choice, or a mix of oregano, basil, and thyme)
- 1/2 tsp. crushed red pepper flakes (reduce to 1/4 teaspoon if sensitive to spice)
- 1 cup part skim mozzarella cheese (freshly grated, divided)

Really tasty. Strong thumbs up from whole family. The cheese as a binding agent gets rid of a lot of the wet mess that can come with squash. Great recipe.

I do not add the salt because there is enough in the tomatoes and other spices. I save the shell and return the mixture to the shell topped with the cheese and bake for 10 more minutes. delicious have made it several times as I grow my own squash. thank you
