Cooked the squash in the instant pot with one cup water on trivet for 12 minutes after cutting in half crosswise and deseeding. Let cool till I could handle and proceeeded with recipe. Delicious and not as heavy as traditional Carbonara.

It was okay I didn’t put the eggs in it ran out of time after taking it out of the oven I will try it again with the egg next time

Very tasty indeed. Added a salad & some sautéed Zucchini with blistered tomatoes. Excellent meal.

This was so good; I love the pasta version of this recipe, nice to have a healthier option. I roasted the squash just because that’s my preferred method for cooking. As some reviewers on the website mentioned, the squash can be watery so I drained before adding. It was still a little watery but not enough to detract from the taste. So quick and easy, I will definitely make again.

was phenomenal. added about 1/4 cup of whit wine. added nice flavor to it, but made it a little soupy.
