- 1/2 tsp. chili powder (organic)
- 2 Tbsp. jalapeños (or diced canned chilis, or to taste)
- 1 cup tomato sauce
- 1/2 cup cilantro (finely chopped + more for garnish)
- 1 1/2 cups colby jack (/Tex Mex/Mozzarella cheese, shredded & divided)
- 1/4 tsp. salt
- 1/2 tsp. ground black pepper

I switched out the tomato sauce for enchilada sauce and it was amazing! Will make again!

AMAZING!! Even my kids that hate spaghetti squash loved his! I don’t like spicy foods, so I went light on the chili powder and switched green chilis for the jalepenos. I also added canned sweet corn. It was a hit with my family and co-workers! Easy to make too. I actually sampled the filling before adding the cheese and loved it then too. I might cut out or reduce the cheese if I’m trying to cut calories.

This was delicious and easy. I followed the recipe precisely the first time. After that, I've changed the beans and cheese to what I had on hand. It was great!!!

Delicious, easy, and minimal work. I omitted cilantro and you could add a lot of different tex-mex ingrediants.
