- 1/2 tsp. salt
- 1 red bell pepper (chopped into small dice)
- 1 can black beans (rinsed and drained)
- 1/2 cup green onion (thinly sliced)
- 1/2 cup chopped fresh cilantro
- 2 Tbsp. lime juice (fresh-squeezed)
- 1 tsp. Spike Seasoning (optional but highly recommended)
- 1 tsp. ground cumin
- 1/2 tsp. ground ancho chile pepper (or use regular chile powder if you don't have Ancho)
- ground black pepper (fresh, to taste)
- 1/4 cup extra virgin olive oil

I wanted it to be more hearty so I added 1 medium, diced and steamed sweet potatoe, and 1/2 chopped jalapeño. I also added Franks hot sauce to the dressing instead of the Seasoning mix, and it turned out very nice!

I opted not to put the dressing because I personally did not like the way it tasted and I followed the recipe. I thought it was really good without the dressing anyhow and threw in some feta cheese ❤️

This was fantastic! I didn’t have all the spices, but I added Kalamatas olives and a bit of it’s juice too. Highly recommend!

I made this about a month ago and have made it min 10 times since then. Just two of us, so it last a few days afterwards. We love it and never get tired of it!!

I didn't have green onion so I used a small purple onion instead. Great dish for summer and easy and fast to make!
