- 3 serrano peppers (stemmed, seeded, and minced)

- 2 cups corn (frozen is fine)
- 1 1/2 lb. portobello mushrooms (remove stems and cube, baby bellos work well)
- 2 Tbsp. chili powder
- 1 Tbsp. ground cumin
- 1 1/4 tsp. salt
- 1/4 tsp. cayenne
- 28 oz. diced tomatoes (or if in season 4 large tomatoes peeled, seeded and chopped)
- 45 oz. black beans (rinsed and drained)
- 15 oz. tomato sauce
- 1 cup vegetable stock
- brown rice (Cooked)
- light sour cream (to garnish, optional)
- avocado (Diced, to garnish, optional)
