- 1 cup chopped bell peppers
- 10 oz. frozen corn kernels ("supersweet" corn is good in this, though any kind should work)
- 15 oz. black beans (or bag of, drained and rinsed)
- 12.3 oz. silken tofu (I like Mori-Nu organic)
- 1/2 tsp. marjoram (dried)
- 1/2 tsp. dried basil
- 2 tsp. apple cider vinegar
- 4 Tbsp. olive (and/or canola oil)
- 1 tsp. salt
