- 1 onion (medium, finely chopped)
- 1 green bell pepper (diced)
- 16 oz. firm tofu (tub firm or extra-, well drained and blotted, then cut into ½-inch dice)
- 4 corn tortillas (cut into approximately 1-inch pieces)
- 1 1/2 cups tomatoes (diced ripe, or one 15- to 16-ounce can diced tomatoes, lightly drained)
- 1 cup salsa (your favorite variety, mild, medium or hot; try an interesting flavor like chipotle)
- 2 chili peppers (small hot fresh, such as jalapeño, seeded and minced, optional)
- 2 tsp. ground cumin
- salt
- freshly ground pepper
- 3/4 cup grated cheddar (style pepperjack vegan cheese, optional)
- fresh cilantro (Minced, or parsley for garnish, optional)
