- 1 red bell pepper (sliced very thin and cut in smaller pieces)
- 2 green onions (sliced)
- 3 ears corn kernels
- 1/2 cup frozen corn
- 1 handful chopped cilantro
- 1 cup chipotle (or spicy ranch, I used Marie's Chipotle Ranch)
- 2 Tbsp. mayo (I used reduced fat)
- 3 apple cider vinegar (splashes)
- ground pepper (fresh)

Recipe didn't call for chipotle peppers. It called for a Chipotle Ranch dressing. Happened to have some on hand but it's not hard to make if you don't. Good recipe...love the corn in the slaw.

It was good...If you use 1 cup of chipotle like recipe says you will be sorry. I only used about a tablespoon and it was plenty spicy.
