I found this greasy and bland. However, with a few changes, it makes a good alternative to hash browns for breakfast:
1. Use canola or olive oil rather than butter
2. Add a pasilla chile
3. Add red pepper for color
4. Garnish w/ fresh cilantro and cotija cheese
