- 2 Tbsp. olive oil
- 1 lb. skinless boneless chicken breasts (diced)
- 1 onion (medium, large, minced)
- 1 cup frozen corn
- 14.5 oz. black beans (rinsed and drained)
- 2 1/2 cups baby spinach
- 2 jalepenos (seeded and minced)
- 1 Tbsp. cumin
- 1 Tbsp. chili powder
- 2 cups shredded pepper jack cheese
- salt
- 10 flour tortillas

Directions
- Preheat the oven to 350F degrees.
- In a large skillet, heat the olive oil on medium. Add in the chicken, season with salt & pepper to taste, & saute for 5 minutes.
- Stir in the diced onions & cook until the chicken is cooked through. Stir in the spices, jalapeno, black beans, corn, & baby spinach and cook until the spinach has wilted.
