  • 1/2 red bell pepper
  • 1/2 green bell pepper
  • 1/4 red onion
  • 1/2 tsp. cumin

  • 1 cup black beans (drained and rinsed)
  • 12 eggs
  • 1/2 cup whole milk
  • 3/4 tsp. salt
  • 1/4 tsp. black pepper
  • 6 oz. Mexican cheese blend (shredded)
