Directions
- MELT Spread in large nonstick skillet over medium-high heat and cook chicken, stirring frequently, until chicken is thoroughly cooked, about 5 minutes. Remove chicken and set aside.
- PREPARE Knorr® Fiesta Sides™ - Mexican Rice in same skillet according to package directions.
- STIR in chicken, beans, tomato and lime juice.

I doubled the recipe to make a larger pot. I also added a little more lime juice than in the recipe, chopped red peppers, chopped onions, and cayenne pepper. I also like my dishes a little on the spicy side. Everything else I followed though, and I would definitely make it again!
