This was great, but I ended up using a full tbsp each of cumin and chili powder instead of one tsp each. I also used pepperjack cheese instead of cheddar and mozzarella. It only needed to cook for 30 min., not 40-50, so check it early.

I made this for breakfast and it was delicious! One of the best breakfast casserole recipes I have tried.

Very good. Would definitely make to bring to a group brunch. Not terribly spicy, which lent itself to adding sour cream, salsa, and avocado. If you wanted it to be spicier, you could up the dosage of cumin and chili powder a bit or have some hot sauce on hand.
