- 2 chipotle chiles
- 1 can chipotles in adobo
- 1 Tbsp. lime juice (freshly squeezed, and zest)
- 1 cup frozen corn (thawed)
- 1 cup canned black beans (rinsed and drained)
- 1 bell pepper (cut into thin strips)
- 1 cup jicama (thinly sliced, or red apple, peeled, cored and thinly sliced)
- 1/2 cup cilantro

- 4 flour tortillas (or wraps, I love FlatOut flatbread wraps)
