- 1/2 avocado (a ripe, peeled, pitted and chopped)
- 1/4 cup nonfat plain greek yogurt
- 1 Tbsp. fresh lime juice (I sometimes use more than this because I love lime, feel free to increase to taste)
- 1 Tbsp. apple cider vinegar
- 2 Tbsp. water
- 1/2 tsp. minced garlic
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 lb. flank steak (raw lean, trimmed, cut into thin strips)
- 5 tsp. southwest seasoning (I use McCormick)
- 1 Tbsp. canola oil (divided)
- 1/2 cup frozen corn kernels
- 1/2 cup canned black beans (drained and rinsed)
- 1/2 cup grape tomatoes (chopped)
- 1 garlic clove (minced)
- 1/8 lime
- 12 cups lettuce (torn, I used green leaf lettuce)
- 8 Tbsp. tortilla strips
