This turned out soooo tasty! A healthy, vegetarian alternative to Chipotle's burrito bowls. This salad is packed with flavor and protein. I made no modifications to the avocado sauce, but I did pick and choose which ingredients I want and don't want on my salad, and it still came out delicious.
