- 1 cup white quinoa (or dry, red)
- vegetable oil
- 2 lb. chicken breasts (Foster Farms Simply Raised Thin-Sliced)
- 15 oz. black beans (rinsed)
- 15 oz. sweet corn (drained)
- 2 avocados (ripe, peeled, seeded and cubed)
- 3 heads romaine lettuce (depending on size, chopped)
- 2 cups baby spinach leaves
