- 1 Tbsp. self rising flour (I didn’t have this, so I just threw a pinch of baking powder in and it worked just fine)
- 4 tsp. granulated sugar
- 3/4 cup vegetable oil
- 4 eggs
- 1/2 cup water
- 1/3 cup fresh strawberries (finely diced.)
- 8 oz. cream cheese (softened)
- 8 oz. unsalted butter (softened)
- 2 lb. powdered sugar
- 1 pinch salt
- 1 tsp. vanilla extract
- 1 cup sweetened shredded coconut
- pink food coloring
- strawberries (for garnish, optional)
