Simply delicious! I did not have a ham hock, so I added about an ounce of chopped up prosciutto when I started cooking the beans, and then put in a quarter pound of chopped off the bone ham ar the same time I added quartered baby Yukon gold potatoes. The only seasoning I used was about six shakes of Penzey’s brand pepper. The beans were fresh from a farm stand. Perfect, flavorful dish for a cool fall night!
