- 1 tsp. cumin seeds
- 1 tsp. coriander seeds
- 1/2 tsp. turmeric
- 2 tsp. chilli flakes (or Powder)
- 2 inches fresh ginger
- 3 cloves garlic
- 1 onion
- 1 tsp. tamarind paste
- 400 grams cod (White Fish, for example)
- 200 grams mushrooms (whatever type is convenient)
- 1 can coconut milk (full fat – if yours isn't, use oil intead of reducing and adding stock)
- 2 Tbsp. tomato puree
- 500 mL chicken stock
- 1 bay leaf
- salt
- lime juice
- caster sugar (Optional)
