- 1 sweet potato (about 400g/7.5 oz, cubed)
- 3 sweet peppers (– any colour, deseeded and chopped into bite-sized pieces)
- 1 tsp. cumin seeds
- 1 pinch salt
- 200 grams black beans (cooked, rinsed)
- 50 grams rocket (OR watercress, you may not want to use it all)
- 1/2 red onion (small, sliced thinly)
- 2 sprigs fresh oregano (– optional)
- 1/2 lime
- 1/2 satsuma
- 1 garlic clove (OR ¼ tsp dried garlic)
- 1/2 tsp. dried oregano
- 1/4 tsp. cumin seeds (freshly toasted and ground, or pre-ground)
- 1/4 tsp. smoked paprika (– optional)
- 1 pinch salt
- 3 Tbsp. extra-virgin olive oil

Ace. Added wild rice & sweetcorn. Needs more chilli, that dressing is superb.

Yum! Made with butternut squash instead of sweet potato, and left the peppers unroasted for extra crunch. Skipped on the rocket and added finely chopped coriander instead. Very tasty, and lasted a good few days without going soggy.

I loved this and so did the family. It was great for work lunches too for a few days. I will definitely make this again.
