This was pretty good! Gave 4 instead of 5 stars because of a few things: when the lime flavor really came through it tasted a little odd to me and my husband (but that only seemed to be on the pieces near where the lime had been placed in the chicken, I’d leave it out next time). Also, after marinating the chicken for hours, you’re supposed to “drizzle” wine on top of it when you put it in the roasting pan. I did, but it drizzled the marinade right off, so seemed like pointless step, because I can’t really see the wine adding that much flavor to the chicken vs the marinade (I scooped the marinade back onto it, however). I also skipped the basting of the chicken every 15 minutes since basting hasn’t been shown to actually do anything to add to flavor, and skipping it meant less work! Oh, we just ate the chicken with veggies, not with guacamole and tortillas as the recipe suggests. It was moist and tasty, I recommend it!
