- 1 kg chuck steak (in large dice)
- 700 mL Burgundy wine
- 200 grams bacon lardons (smoked)
- 8 shallots (I diced mine but you can leave them whole if you prefer)
- 4 carrots (medium, peeled and diced)
- 2 celery stalks (large, washed and diced)
- 10 chestnut mushrooms (or white, sliced)
- 3 cloves garlic (minced)
- 2 Tbsp. tomato purée
- 400 mL beef stock (– I used a great cheat, Baxters beef consomme)
- 2 bay leaves
- 1 sprig rosemary
- 1 handful fresh thyme
- 100 mL water
- black pepper
- sea salt
- duck (/goose fat, this gives the dish a shiny glaze)
- 1 Tbsp. cornflour (made up into a paste)
- unsalted butter (for frying)
- vegetable oil
- 150 mL milk
- 100 grams salted butter
- potatoes (Mashing, peeled and cut in half)
- carrots (peeled and cut into chunks)

Soft and juicy meat simply melting in your mouth. Worth every hour of cooking. And the sauce is delicious!!!!
