  • 1 kilogram chuck steak (in large dice)
  • 700 milliliters Burgundy wine
  • 200 grams bacon lardons (smoked)
  • 8 shallots (I diced mine but you can leave them whole if you prefer)
  • 4 carrots (medium, peeled and diced)
  • 2 celery stalks (large, washed and diced)
  • 10 chestnut mushrooms (or white, sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato purée
  • 400 milliliters beef stock (– I used a great cheat, Baxters beef consomme)
  • 2 bay leaves
  • 1 sprig rosemary
  • 1 handful fresh thyme
  • 100 milliliters water
  • black pepper
  • sea salt
  • duck (/goose fat, this gives the dish a shiny glaze)
  • 1 tablespoon cornflour (made up into a paste)
  • unsalted butter (for frying)
  • vegetable oil
  • 150 milliliters milk
  • 100 grams salted butter
  • potatoes (Mashing, peeled and cut in half)
  • carrots (peeled and cut into chunks)
