- 400 grams bread flour (3 cups)
- 200 grams wheat flour (whole grain turkey red, ~1 1/3 cups*)
- 400 grams water (1 2/3 cups)
- 90 grams sourdough starter (1/3 - 1/2 cup)
- 14 grams olive oil (1 Tbsp)
- 10 grams salt
- 16 oz. frozen spinach (defrosted and drained in a colander)
- 3 cloves garlic
- 3 Tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/8 tsp. nutmeg
- 1 cup mozzarella (shredded or chopped)
- 1/2 cup pecorino romano (grated or shaved, or parmesan)
- 15 slices pepperoni (salami, chorizo)
- 1 bag frozen broccoli florets
- 1/2 medium onion (diced)
- 3 Tbsp. olive oil
- 1/2 tsp. salt (skip this if you use a salty meat and cheese in the filling)
- 1 tsp. red pepper flakes (based on your spicy preference)
- 1 cup medium cheddar (shredded or chopped)
- 1 lb. ground beef (90% lean if possible**)
- 1/2 cup chopped onion
- 2 cloves garlic (minced)
- 3 Tbsp. pickled jalapenos (chopped sweet, OR 1/2 cup chopped bell pepper)
- 2 tsp. ground paprika
- 1 tsp. ground cumin
- 1 tsp. salt (less if you use pickled jalapenos and cheese, more if you skip the cheese and/or use bell peppers)
- 1/4 tsp. ground black pepper
- 1 beaten egg (for eggwash)
- sesame seeds (optional, to sprinkle on top)
